So how do you make your cookies soft or chewy or crispy? Simply adjusting the amount of key ingredients will affect the texture of your cookies.
Brown sugar contains molasses which adds moisture to cookies. Adding more brown sugar produces softer, chewier cookies.
White sugar on the other hand, produces crispier cookies, as does using a higher proportion of butter to flour.

Preheat the oven to 180°C / 350°F.
Grease and line 2 large baking sheets.
Place the butter and sugar in a large mixing bowl and cream with an electric mixer. Beat until the mixture becomes light and fluffy.
Add the egg and beat until creamy. Stir in the oats, milk and vanilla extract and mix until well blended.
Sift together the flour, cocoa and baking powder and fold into the mixture. Chop the chocolate into coarse pieces and add to the cookie dough.
Place tablespoons of the mixture onto the baking sheets and flatten slightly with a fork. Bake in the oven for 15 minutes or until golden brown
Remove from the oven, leave to cool for several minutes then lift with a spatula and transfer to a wire rack to cool.
