This is our easy sugar cookie recipe. Follow our directions and surprise your mom on Mothers Day.
Place the butter and sugar into the bowl of an electric mixer and beat until the butter becomes pale in color and the sugar is dissolved. The mixture should be light and fluffy.
Add the vanilla extract and egg and continue beating until the mixture is creamy. It is important not to overbeat the mixture.
Sift together the flour and salt and fold into the butter mixture. Turn the dough out onto a floured board and gently work the dough into a ball.
Wrap the dough in cling wrap and chill in the refrigerator for about 30 minutes.
Preheat the oven to 180°C / 350°F and line two baking sheets with parchment or baking paper.
Remove the dough from the fridge and cut in half. While working with one half, leave the other half in the fridge. Roll the dough out until it is about ¼ inch thick and cut out shapes. If the dough is sticky roll it out between two sheets of baking paper. Place the cookie cutters as close as possible to the edges to minimise the number of times the dough is re-rolled.
Repeat this process with the other half, then gather up all the remaining dough scraps, re-roll and cut out shapes. Place on cookie trays allowing sufficient room for the cookies to spread during baking.
Bake in the oven for 12 - 15 minutes or until the cookies are golden. Remove from the oven, leave on the trays for a few minutes then transfer to wire racks to cool.
When the cookies are completely cold, cover with frosting and decorate.
To make the glaze, sift the icing sugar into a bowl, add the water and stir until the icing is smooth. Add the water gradually, until you have the desired consistency. If you add too much water and the icing is too runny, simply add more confectioners sugar.
Make your cookies using a butterfly shaped cookie cutter:
Cover your cookies with some brightly colored frosting

Place dragees around the outline of the butterfly cookies

Decorate with silver dragees and leave the icing to set
Take a white or pastel colored icing pen and pipe an outline around the edges of the cookies
Use a flower shaped cookie cutter to make cookies:

Buy some sugared flowers and place in the centre of the cookies
Roll out a small amount of fondant icing and tint with a few drops of food coloring.
Brush the cookies with some warmed apricot jam. This will help the icing stick to the cookies.
Using a small flower shaped fondant cutter cut out flower shapes and place in centre of cookie. Cut out a small circle of fondant, in a different color, and place in the center of the flower.
