Granola Bar Recipe

Healthy Granola Bar Recipes

This healthy granola bar recipe was a hit with my family. Sweetened with honey and a caramel sauce, these granola bars have a sweeter taste. Great for those people who want to eat healthy but also crave a bit of sweetness.


Ingredients

  • 175 g / 6 oz / ¾ cup unsalted butter, diced
  • 150 g / 5 oz / 2/3 cup clear honey
  • 250 g / 9 oz / generous 1 cup Demerara / raw sugar
  • 350 g / 12 oz / 3 cups granola (muesli)
  • 1 teaspoon ground cinnamon
  • 75 g / 3 oz / ¾ cup pecan nut halves
  • 75 g / 3 oz / generous ½ cup raisins
  • 75 g / 3 oz / ¾ cup ready-to-eat dried papaya, chopped
  • 75 g / 3 oz / ¾ cup ready-to-eat-dried apricots, chopped
  • 50 g / 2 oz / scant ½ cup pumpkin seeds
  • 50 g / 2 oz / scant ½ cup sunflower seeds
  • 50 g / 2 oz / 2 tablespoons sesame seeds
  • 50 g / 2 oz / ½ cup ground almonds

Method

  1. Preheat the oven to 190°C / 375°F. Line a 23 cm / 9 inch square cake tin with parchment paper.

  2. Place the butter and honey in a saucepan and stir gently over a low heat until the butter has melted and the mixture is smooth.

  3. Keep the pan over the heat and add the Demerara sugar while continuing to stir until the sugar has completely dissolved.

  4. Increase the heat and bring the mixture to the boil. Boil the mixture for 2 minutes. Continue to stir constantly until a caramel sauce is formed.

  5. Remove from the heat and add the remaining ingredients. Mix until all the ingredients are combined.

  6. Spoon the mixture into the prepared tin. Press the mixture firmly into the tin with the back of the spoon.

  7. Bake in the oven for 15 minutes until the edges turn brown.

  8. Remove from the oven and leave in the pan to cool. Chill in the refrigerator before serving. To serve remove from the pan and cut into bars.

Granola Cookies

These granola cookies have a beautiful taste and texture. Once cool they become crisp and will store for up to 5 days. Add them to your list of healthy granola bar recipes.

Ingredients

Granola Cookies
  • 115 g / 4 oz / ½ cup unsalted butter, diced
  • 75 g / 3 oz / ½ cup soft light brown sugar
  • 75 g / 3 oz /1/3 cup crunchy peanut butter
  • 1 egg
  • 50 g / 2 oz / ½ cup plain / all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • 225g / 8 oz / 2 cups granola (muesli)
  • 50 g / 2 oz /1/3 cup raisins
  • 50 g / 2 oz / ½ cup walnuts, chopped

Method

  1. Preheat the oven to 180°C / 350°F. Line two cookie sheets with baking parchment.

  2. Place the butter and sugar in a small bowl and beat with an electric mixer until light and fluffy. Beat in the peanut butter then beat in the egg until the mixture is creamy.

  3. Sift together the flour, baking powder, cinnamon and salt and add to the butter mixture. Gently stir with a wooden spoon until the ingredients are almost combined.

  4. Then add the granola, raisins and chopped walnuts and continue to stir until all the ingredients are mixed through.

  5. Take tablespoons of the mixture and drop them onto the baking trays leaving sufficient room between each. Using the back of the spoon gently press each cookie into a round.

  6. Bake in the oven for about 15 minutes or until golden brown.

  7. Remove from the oven and leave on the baking sheets for a few minutes to cool slightly. Then using a wide slotted spatula transfer them to wire racks to cool completely.

Variations

If you don't have all of the ingredients listed in our healthy granola bar recipes don't despair. You can substitute. Try using instead:

  • Dried pineapple
  • Dried mango pieces
  • Dried paw paw
  • Craisins or dried cranberries
  • Pistachios, almonds or peanuts
