These no bake snowball cookies are absolute bliss.
Melted white chocolate is mixed with coconut and cake crumbs, then rolled into balls to be coated in yet more coconut and dusted with confectioners sugar to resemble snowballs.
Traditionally served during the holiday season, these snowballs are an indulgent treat to be enjoyed.
Break the chocolate into pieces and place in a heatproof bowl with the butter.
Melt the chocolate and butter over a pan of gently simmering water, stirring frequently.
Remove the bowl from the heat and leave to cool for a few minutes.
Place 50 g / 2 oz / 2/3 cup of the coconut on a plate and set aside.
Crumble the cake in a separate bowl and add the remaining coconut. Add the crumbled cake mixture to the melted chocolate. Mix well to form a paste.
Take spoonfuls of the mixture and roll into balls. Roll them immediately in the reserved coconut.
Place the balls on waxed paper and leave to set. Then dust liberally with the confectioners sugar.
These will store in the refrigerator for 3 days.

Before you begin making these cookies have the trays prepared and the ingredients measured out as the mixture sets very quickly.
You will need to work quickly while the mixture is still warm. Once it cools the mixture hardens and sets and you will be unable to shape them.
The chocolate is the star of the show in this recipe so use good quality white eating chocolate.
When melting the chocolate, place the chocolate over a low heat and make sure the bowl doesn't come into contact with the water.
